I've used CMS before (Concrete 5) which was a lot more plug and play(drag
and drop).
I've got a new web space for my store (domain, site, etc.) They use Joomla for CMS. I've brought it up and it all looks foreign to me.

Is there a good book or tutorial for noobs.?
The one's I have seen are more about Install and download a template.
I've looked at 100's of templates, and they all look the same and are shitty.
I know what I want, I just need to know how to get there, or some way to
know how.
